Cooling Cucumber Basil Soup | 5-Minutes to Make A Warm Weather Favorite

I’ve made this soup three times in a row and today I had it for breakfast instead of the smoothie I’ve been into for a year strong. It’s that good, easier than easy, cheap, perfect for hot weather, *and a recipe a love because it’s a template that will work with a lot of variations. Salud, my friends.

Cucumber mint soup 🍃

• 3 medium cucumbers or 12 mini cucumbers (my preference, because you get a higher skin to center ratio).
• 1 cup fresh mint or basil leaves
• 5 cloves garlic (or more)
• 6 - 8oz yogurt (original recipe asks for 2 cups but I never needed more than 6oz. You know my favorite non-dairy brand: @lovvelavva)
• 1 - 3 tablespoons olive oil (less for a lighter recipe)
• 1 - 2 tablespoons apple cider vinegar
• 1 teaspoon salt (more to taste if nec.)
• 12 drops hot sauce
• 1/2 cup water (or more if needed)

Blend all on high. Store in the fridge. Serve with plantains, cassava flatbread, flax seed crackers, or over fresh, light greens for a soupy-salad.
